For my birthday, I received a dehydrator, an industrial meat grinder, and a sous vide! I've already made pemmican with the dehydrator, and now I'm making my first batch of beef jerky. I also bought some inexpensive cuts of beef and ground them myself with the meat grinder. Last night, we had our first sous vide meal—a perfectly cooked ribeye steak! Every one of these kitchen tools has exceeded my expectations. I feel like I've just leveled up my knowledge of meat and all the different ways.

My struggle: the cataract surgery on my left eye still isn't right. There's a shadow off to the side that hasn't cleared, and the second eye is on hold until it does. Bright screens are a fight. The way through has been building a tool that lets me work half blind, talking to my computer and having it read, click, and check things back to me. That's how this guide got built, one voice command at a time. If your eyes are going, you're not done. 🦅

A prayer request. For my left eye to clear so the second surgery can happen, and for everybody here who is fighting their health by themselves at 2 in the morning. You're not by yourself in this room. No One Left Behind. 🙏🦅
